Christmas bread stolen

Stolen is a traditional German Christmas bread. Compared with ordinary bread, its formula increases the proportion of butter and eggs, and adds a lot of dried fruit with wine stains. The appearance looks like country bread is very simple, but the texture is delicate and soft. Its high in oil and sugar, and dried fruit with wine stains is sweet, so its hard to think bad!

6 Berry sugar 35g
7 yeast 3G
8 salt 2G
9 water 75g (depending on the water absorption of flour and the humidity of local weather)

Operational steps

1 Mixed fruits were dried and chopped, soaked in rum for 7 days, and drained.
2 Material A (160g high flour, 140 g starch, 80 g butter, 2 eggs (110 g 0, 35 g fine granulated sugar, 3 G yeast, 2 g salt, 75 g water), except butter, all the other ingredients were put into the bread machine and mixed with the flour procedure to mix to a smoother dough.
3 Add the sliced butter at room temperature and continue stirring until the blending process is over.
4 Continue to use the fermentation process, stir until the dough surface is smooth and ductile, add wine-stained fruit to dry and knead into the dough.
5 Cover the dough and let it grow to about twice the size of the original dough until the fermentation process is over.
6 Remove the dough and exhaust, evenly divide it into 2 equal parts, and let it relax for 15 minutes.
7 Roll the loose dough into an oval shape
8 Then fold 2/5 of it, press it and put it in the baking pan.
9 Secondary fermentation to twice the size, into the preheated 180 C oven middle baking;
10 After 20-25 minutes of surface colour, the oven is discharged and a layer of butter is brushed immediately.
11 Sprinkle a layer of sugar powder after cooling and put it in a fresh-keeping box. It tastes better after 3 days.
