Christmas is not only popular in Europe and America, but also an influential festival all over the world. It is not only a grand festival for devout believers, but also a good day for family gatherings. At such a family gathering, delicacies are the theme of course. Today, we made a tea-smeared black bean cream cake roll to welcome the coming Christmas. There are several big snowflakes and small snowflakes made of coconut on the surface of the cake roll to create the Christmas atmosphere. The matching of tea and red bean paste makes the cake roll really tasty!
Food Material List
- 1 Unsalted butter 200g
- 2 White granulated sugar 40g
- 3 Powdered sugar 10g
- 4 Tea powder 5g
- 5 Low powder 85g
- 6 milk 54G
- 7 Vegetable oil 50g
- 8 Egg 5
Operational steps
- 1 Firstly, the egg paste for snowflake was made. One egg white and half egg yolk were poured into two containers respectively. The egg yolk was mixed with milk and 8 grams of starch were added to mix the egg yolk.
- 2 Cut and mix the egg yolk paste evenly, then put it into the mounting bag, and squeeze the snowflake pattern on the baking tray covered with oil paper. Put it in the middle of the preheated oven and heat it 160 degrees for 3 minutes.
- 3 Sift the starch and tea powder, mix 10 grams of sugar with 5 yolks, add milk and vegetable oil, and beat with a manual beater until even. Sift in the mixed powder and stir it evenly without particles.
- 4 Add 5 proteins to the oil-free and water free container, add lemon juice and salt, beat egg white to foam at low speed with electric egg whisk, add 30 grams of granulated sugar three times, beat to the egg beater and bring out the big bend hook, that is, the wet foaming protein paste is finished. Then you can turn on the oven and preheat the fire up and down the fire 170 degrees.
- 5 The beaten egg yolk paste is added twice with a rubber knife (a quarter of the amount each time). Each time, the egg yolk paste should be cut and mixed evenly, and the action is light and fast, so as to prevent defoaming. (The action of cutting and mixing is: stick the rubber knife to the edge of the container, pull out the yolk paste from the bottom, cut 3 or 4 times like cutting vegetables, and repeatedly pick up the process of cutting.) Finally, the yolk paste is poured into the remaining protein and stirred evenly.
- 6 Pour the well-blended egg paste into the baking pan with the pattern of snowflakes (I use a baking pan of 35*25), smooth the surface with a scraper, and shake a few bubbles gently on the table. Place the baking tray in the middle of the preheated oven and heat it 160 degrees for 20 minutes.
- 7 When baking a cake, put the light butter into a clean container without water or oil, add sugar powder and beat it with an electric egg beater until it can not flow.
- 8 Take out the baked cake and shake it gently. Then turn it upside down on the baking net, tear off the grease paper and cover it with the grease paper to cool it.
- 9 Spread clean grease paper on the table, bake the cake face down and put it outside for repair. Spread the butter on the cake and put the red bean paste on it. Roll up the cake with rolling baton, wrap the grease paper and put it in the refrigerator for half an hour to set.
- 10 The cake roll was taken out of the refrigerator and sprinkled with coconut to decorate it into small snowflakes. The cake roll was cut into the size needed and ready to eat.
