Durian Mousse Cake

Someone gave me durian, but durian was not ripe for a week in the refrigerator. So make all kinds of desserts!

Food Material List

  • 1 Egg One
  • 2 Sugar (egg yolk) 10g
  • 3 Sugar (protein) 15g
  • 4 Low-gluten flour 30g
  • 5 Brittle bottom baking of cake billet 190 degrees 10 minutes
  • 6 Durian pulp 150g
  • 7 Yogurt 50g
  • 8 Granulated sugar 50g
  • 9 Unsalted butter 150g
  • 10 Gelatin sheets 1.5 tablets
  • 11 water 40g

Operational steps

  • 1 Cut the oil paper into two circles one size smaller than the six-inch mould chassis and place them on the baking tray.

  • 2 Whisk the egg yolk with 10 g sugar, whisk the egg white with 15 g sugar until stiff foam. Add egg white into yolk twice and mix well. Add 30g low gluten flour and mix well.

  • 11 Add the second piece of crisp cake and pour the remaining half of durian cream into it.

  • 12 Shake the mould to smooth the surface of the cake and put it in the refrigerator for refrigeration.

  • 13 Soak 100g milk into half of the gelatin tablets, add 15g sugar and 2.5ml tea powder, heat and stir evenly in water.

  • 14 When the milk is cool enough, sprinkle it on the refrigerated cake, and finally refrigerate the whole cake for more than 4 hours!
