Boiled Fish with Pickled Cabbage and Chili

I havent cooked for a long time. Ive been busy for a long time. Finally, I can rest and reward my stomach and my family. I like all kinds of grass carp dishes very much. I went to learn from the chef specially. Its very authentic.

Food Material List

  • 1 Grass Carp One article
  • 2 pickled pepper
  • 3 Sauerkraut bags (available in supermarkets) One
  • 4 egg white One

Operational steps

  • 1 Wash the killed fish and press it close to the bones under the slices of the fish. Cut the fish fillet into pieces about 0.5 cm thick. Cut the fish fillet into pieces about 5 cm thick.
  • 2 Grab fish fillets with wine, starch, egg white and salt, mix well and marinate for 15 minutes. Heat the oil in the frying pan, stir-fry ginger slices, garlic slices and pickled peppers, stir-fry the ready-made pickles for 3 minutes, then add some clear soup or boiling water (the amount of water can not exceed all fish slices) and boil the fish steak for 10 minutes to boil the fresh taste.
  • 3 Sauerkraut will be put into a bowl for use, leaving the soup in the pot, so as to prevent too much sauerkraut in the pot, fish fillets are not easy to cook. Pickled fish fillets will be put into the soup one by one, dispersed with chopsticks, and so on. Fish fillets will be boiled and discolored, seasoned with salt, sugar, chicken essence, pepper powder, served in a deep dish, cooked with a little pepper oil and poured on the fish fillets.

Tips

1. Sauerkraut fish is usually made from grass carp. The meat is tender and fat. Carp is also a good choice.
2. Vegetables such as vermicelli, bean sprouts and Flammulina velutipes can be added to the soup of sour vegetable fish; or sour vegetable fish soup boiled with fish steak can be used as the bottom of the pot, that is, sour vegetable fish hotpot.
3. The sauerkraut is served first and then the fish fillets are added, which can better keep the fish fillets fast-ripening and not easy to disperse.
