Dry Fried Ridge

  • 1 Pork tenderloin 400g

Operational steps

  • 1 1: Ridge sliced, put a little salt, cooking wine, raw soy sauce, pepper powder, starch, scallion, ginger shredded grab well. Marinate for about 30 minutes.

  • 2 2: Blend. Use proper amount of flour, starch, an egg white and water to make a thin paste. Remove the ginger from the marinated tenderloin and paste it.
  • 3 3: Put oil in the pan. When the oil is heated to about 70%, turn to medium or small fire and put it into the ridge. Deep-fry until yellowish.
  • 4 4: Keep burning oil until 90% of the fried tenderloin is hot. When the color of the tenderloin is slightly darker, remove it.
