- 1 Cut off the shrimps and wash them. Cut a knife across the back of the shrimps. Add salt, wine and white pepper and mix well. Marinate for 15 minutes.
- 2 Cut scallions into sections; slice ginger and garlic; cut peppers into pepper rings; dice green peppers.
- 3 Heat the oil in the pan, stir-fry the shrimps until the shrimp shell turns red, and immediately put them in a dish.
- 4 Add oil and heat, stir-fry dried chili pepper and chili sauce with small fire, add scallion, ginger and garlic slices, stir-fry until fragrance overflows, then add soy sauce, salt, add grass shrimp, peanut rice, stir-fry evenly, add sugar, drizzle with cooking wine, sprinkle pepper noodles and serve.
