Operational steps

1 Eggs are dripped into a few drops of oil, beaten evenly, and spread into a non-sticking pot to form an egg skin.
2 Bamboo shoots are shelled and boiled in dilute salt water for 5 minutes to remove the astringency.
3 Wash the leek and cut it into segments. Cut the egg skin and bamboo shoots into shreds.
4 Heat oil in a hot pan, heat oil until leek is added, stir-fry bamboo shoots, add salt, stir-fry soft and sprinkle egg skins.
