Operational steps
- 1 Clean squid head and tail, leave middle section, cut into 1 cm wide circle. Add scallion, salt, ginger slices, cooking wine and marinate for 10 minutes.

- 4 Heat the oil in the pan for 7 minutes, then fry each piece gently until golden yellow is removed. Tomato sauce, salt and pepper noodles can be dipped according to the taste.
Tips
1. I use fresh squid. If I dont have it, I can buy quick-frozen squid rings in the supermarket. They taste poor and have smaller rings. 2. When frying squid, the movements should be easily stereotyped.
