Making a cake roll with hemp leaves an egg white and half a bag of milk, which is stirred together to knead a piece of dough (shout with me: For home baking, our aim is not to waste! XD). The ratio of liquid ingredients is based on Wu Baochuns Golden Milk Toast. Operational steps

  • 1 Mix ingredients: Pour bread flour, sugar and salt together and mix well with egg whisk. Dissolve yeast with 150 g milk, whisk the protein with chopsticks and mix it in.   • 4 Plastic: Push the dough gently to expel part of the gas, weigh it and divide it into 5 parts. Then roll it round and relax for 15-25 minutes. When the dough is back to ductility, it will form its preferred shape. (Cream roll, Hydrangea roll, or simply knead the dough to make a meal bag, you can clip it.)
  • 5 Fermentation: Move the dough to a warm and wet place and ferment it twice as large again. A light finger press will leave a shallow mark on the surface. Preheat the oven and fire 200 degrees Celsius.
  • 6 Baking: Place the baking tray in the middle of the oven, adjust the temperature to 180 degrees Celsius above and below, bake for 15 minutes or so, until the surface is golden, the fragrance floats out, the toothpick inserted into the center is not sticky, you can come out of the oven.
  • 7 Preservation: After baking, the bread is cooled to hand temperature and can be stored in a fresh-keeping bag. The next day the microwave oven burns high for half a minute and can recover its softness.~
