  • 2 milk 150ml
  • 3 Unsalted butter 200ML
  • 4 caster sugar 80g
  • 5 Low-gluten flour 15g
  • 6 Egg tart skin 18

Operational steps

  • 1 Separate the yolk from the egg white and leave the yolk in reserve.
  • 2 Pour the light cream, milk and sugar into the beating bowl and beat well.
  • 3 Beat the yolk, mix the starch with the yolk first, then pour into the mild cream milk mixture.
  • 4 Make sure the mixture is well blended, without caking or particles, the tart water is finished.
  • 5 Pour tart water into tart skin, 7 to 8 points full
