Pure Black Forest Cake

I wanted to make a black forest cake, but I bought almond slices just before, so I decided to make a white chocolate version of the "black forest". To make mounted cake, first of all, we have to bake a cake bottom embryo. I use Qifeng, 8 inch Qifeng. I choose the formula of 5 eggs without foaming powder. If you want to reduce the number of eggs, you can use the formula of 3 eggs with foaming powder. I dont like using foaming powder, so I still use the traditional formula of 5 eggs.

  • 2 Low-gluten flour 85g
  • 3 Corn oil 40g
  • 4 milk 40g
  • 5 White granulated sugar (protein) 60g
  • 6 White sugar (egg yolk) 30g
  • 7 White chocolate 50g
  • 8 Unsalted butter 500g

Operational steps

  • 1 Qifeng Cake - Separate the egg albumin, place the egg white in an oil-free and water-free container, add oil, milk, 30G sugar and flour into the yolk and mix it into a batter.
