Qingtang (Little Chaos)

Qingtang is a famous snack of Zhangshu in Jiangxi Province, which is similar to chaos. Unfortunately, it can not be eaten in Shanghai, so we have to make it by ourselves.

Food Material List

  • 1 Qingtangpi (Chaotic Pi) Appropriate amount
  • 2 Pork Appropriate amount
  • 3 salt Appropriate amount
  • 4 Pepper Few
  • 5 Raw meal Few

Operational steps

  • 1 Chop pork, add proper amount of raw meal, salt, pepper and scallions and stir in one direction until uniform and thick.

  • 2 Roll back the chaotic skin to about twice the size and cut it into four small pieces. Put a small piece of meat in the bottom of the face with chopsticks and fold the bottom corner back to wrap the meat. The thumb holds the bottom corner. The other triangle of the face, one left and one right, is folded back to wrap the meat. (Note that the thumb cant move, otherwise the soup will be kneaded flat. When you cook, you cant float up). If you squeeze it tightly and pull out your thumb, the clear soup will be ready.

  • 3 Boil water in the pot, put chaos after boiling water. When boiling water, take a big bowl, put appropriate lard, ginger powder, onion powder, raw smoke, like hot pepper powder can be added. After boiling water, put the clear soup into the pot. After all, boil the clear soup slightly, use a leaky spoon to put the clear soup into the bowl, according to their own needs, less clear soup. Boiled water into a bowl, stir well with a spoon, add proper salt according to personal taste, and the steaming and delicious clear soup is ready. Eat it while its hot.
