When I was in college, I liked jujube mud cake very much, and I didnt think about making it by myself at that time. 1 Low-gluten flour 100g
2 Jujube 70g
3 Egg 4 only
4 milk 100g

Operational steps

1 When all the materials are ready, we begin to make jujube paste. Steamed jujube is cooled and cored and cut into very small grains. I use brown sugar as a lump, so I need to cut it up. Then I mix two pieces of materials into mud with a mixer. The mixed jujube mud is mixed with half of the milk in a pot and stirred evenly in hot water. Then the jujube mud is ready.
2 Egg yolk protein separation, a good way is to knock eggs from the middle, half the shell in one hand, the yolk constantly exchanged between the two eggshells, the protein will naturally fall into the pot.
3 Beat up 4 yolks, add 40 grams of corn oil and remaining milk, sift the flour, quickly mix and evenly stand by.
4 A few drops of white vinegar are added to the protein to neutralize its alkalinity. The egg beater beats the egg white at high speed until the fish eye is bubbly. Add 1/2 fine granulated sugar. Continue beating until the protein has resistance. Add the remaining fine granulated sugar until the protein foams hard.
5 Add a third of the beaten egg white into the yolk paste, then mix one third of the egg white into the paste, mix all the cake paste into the remaining protein, and the cake paste is ready. Forget taking pictures!
6 The cake is pasted into an eight-inch mold. The mold vibrates vigorously on the table, bubbles up and sprinkles with black sesame. Preheat oven 140 degrees, the penultimate layer, 43 minutes, midway to 135 degrees out of the oven.
7 After the cake is out of the oven, it is immediately poured on the grill to cool until the cake is completely cooled before it can be demoulded, about 4 or 5 hours. Finally, slice up and enjoy the delicious food, haha

Tips

Eggs must be fresh, otherwise the yolk is loose and the protein can not be separated. Dry jujube needs to be steamed for 15 minutes beforehand, so the mud of the jujube is tasty enough.
