  • 11 Gelatin sheets 1.5 pieces
  • 12 Low-gluten flour 90g

Operational steps

  • 1 Make an 8-inch coffee Chiffon Cake first. Take three eggs, separate the egg yolk, add a few drops of lemon juice to the protein, add granulated sugar three times to whisk the hard protein cream. Take 25 ml of cold boiled water and add 2 spoons of coffee powder to mix into concentrated coffee solution. Add two spoonfuls of salad oil, fine sugar, milk, coffee liquor, low-gluten flour to the yolk, and stir the cocoa powder until it is granular. Add the egg yolk paste three times, mix it up and down evenly, pour into the 8-inch cake mould, shake out the bubbles, preheat the oven, then bake at 150 degrees for 45 to 50 minutes.   • 9 Divide the 8-inch Qifeng into 3 layers, because I bake it thicker, actually only need 2 layers. Wrap in a plastic wrap and refrigerate for 6 hours or overnight.
